Lavazza - Coffee Tagliatelle Our coffee tagliatelle is perfect for a light summer lunch. An unexpected, yet sophisticated combination, prepare to impress friends and family with this unusual recipe.
What you need... (for 5/6 servings) FOR THE PASTA 350g (12.3oz) plain flour 150g (5.3oz) all-purpose flour 5 eggs 25g (0.9oz) coffee powder
 FOR THE SAUCE 250g (8.8oz) goat's cheese 100ml (3.3fl oz) milk 100g (3.5oz) cream 75g (2.6oz) hazelnuts 100g (3.5oz) of butter to sauté the pasta 5g (0.17oz) coffee powder
What you do... To prepare the tagliatelle, sift the two types of flour together with the ground coffee. Make a well in the flour and add 5 eggs. Knead for 5 minutes, until the dough is firm and thoroughly mixed. Cover the dough with clingfilm and let it rest for one hour. Roll out the dough on a wooden board and make the tagliatelle using a pasta machine. Break the goat's cheese into pieces and place in a small pan with the milk and cream. Add salt and pepper to taste and stir the ingredients until the cream becomes thick and smooth. Cook the tagliatelle. Sauté the pasta with butter and chopped hazelnuts.
Presentation Pour a thin layer of cheese sauce on a plate, then sprinkle with the chopped hazelnuts and ground coffee. Spread the tagliatelle over the cream and decorate with cheese. Finish with a final sprinkling of coffee. Bon appétit!
